The original game, play it on the NES and skip the other versions, but if you’re not into NES graphics there is a good remake (Castlevania Chronicles) on PSX.
Vampire Killer on MSX (0):
It’s the same as the NES version but with a different –boring- gameplay style.
Castlevania II: Simon’s Quest (?):
I haven’t played it, because of the Angry Video Game Nerd’s video review, I recommend you watch the video instead of playing the game.
Haunted Castle (0):
An arcade version, AVOID IT AT ALL COSTS!!!
Castlevania: The Adventure, Castlevania II: Belmont’s Revenge, Castlevania Legends (0):
The Gameboy versions of the game, Legends was the 1st Castlevania to have a female protagonist .
Castlevania III: Dracula’s Curse (5):
The 3rd installment on NES, great gameplay change with 4 characters to choose from (Unlock differs by the paths you choose during gameplay).
Akumajō Special: Boku Dracula-kun, Kid Dracula (0):
It’s about a baby Dracula and something like that, only played Kid Dracula for several freaking seconds, to hell with them both!!!
Super Castlevania IV (10):
A SUPER OMG! Game, no need to read anything GO PLAY IT!
Akumajō Dracula AKA Castlevania Chronicles (10):
A remake of the original game available on PSX and PSN, jump into this one if you don’t want to play the 1st on NES.
Castlevania: symphony of the night, Castlevania: Rondo of Blood, Castlevania: The Dracula X Chronicles (10):
legendary games in one PSP package, or you can get them separately.
Castlevania: Bloodlines (10):
The only one for the Sega Genesis and the bloodiest of them all!
Castlevania: Dracula X (5):
A poor port of Rondo of Blood but a good game by its own, play the original which is better, oh and expect too much gameplay punishment like the original Rondo!!!

Oh dear!, Here is my theory “Any Castlevania with 3D graphics = S***, screw them all!”.
Castlevania: Circle of the Moon, Castlevania: Harmony of Dissonance, Castlevania: Aria of Sorrow (?):
I haven’t played those so I can’t judge, and Konami got the Pro evolution Soccer policy into their games, DAMN IT!!! How many games in their series they got? A dozen of Silent hills, Dance “FREAKING” Dance revolution, Gradius, PES, Castlevanias and 3 7alloom oo 2 b6a6 oo bedeyan, ohhh and SCREW YOU ALSO CAPCOM, jeez where the hell are the new IPs?

The Castlevania barrage continues on the Nintendo DS, Order of Ecclesia is a mix between classic and Castle maps play style.

It’s a S***ty mobile game.
Castlevania: The Adventure ReBirth (?):
It’s a WiiWare release with the classic gameplay style, according to Wikipedia “The setting of the game takes place a century before the original Castlevania title, where the player controls an ancestor of Simon Belmont named Christopher Belmont, who must defeat the vampire Dracula.”
I haven’t played the Arcade, iPhone and the PSN/Xbox arcade versions of the game.
